"If I want a vegetable garden, I'll plant it myself," is one of many things stubborn Miss Daisy snaps at Hoke in the film's early scenes. He's just trying to help, and doing no harm to her garden, but she wants him out of it because it's hers.
We only see the garden once more, in the film's final scene before Miss Daisy succumbs to dementia. The scene comes in stark contrast to the one preceding it, when a blizzard hits Atlanta. That scene is dark and cold, but it's followed by a bright, sunny scene, full of red tomatoes and other plants and, most significantly, Miss Daisy and Hoke planting the garden together.
The scene shows us that they've planted something more important than tomato seeds. They've grown a friendship.
